Start up of anaerobic biofilm reactor treating synthetic winery effluents and using grape stalks as biofilm carrier

Wine production processes generate organic and inorganic pollutions mostly associated with solid wastes and liquid effluents. The liquid effluents usually referred as “winery wastewater” are mainly originated in washing operations during grape harvesting, pressing and first fermentation phases of wine processing. Pomaces and stalks are the major solid wastes generated in the winemaking process. The working period and the winemaking technologies, volumes and pollution loads greatly vary over the year. Thus, winery wastewater treatment must be applied locally due to the variation in composition presented by effluents from different sources, taking into account the costs as well as the quality of the effluent water. In fact, chemical oxygen demand (COD) values around 5 g L-1 is common, increasing up to 25 g L-1 depending on harvest loads or processing activities. Therefore, it is recommended to develop a locally low cost treatment technology which allows the treatment of liquid effluents taking into account the variation of the organic loading rate (OLR). For this aim, we have investigated the treatment performance and gas production of an anaerobic biofilm reactor using grape stalks as biofilm carrier to treat synthetic winery effluents with an OLR ranging from 0.653 to 25 g L-1d-1 for a short start up periods. The results showed that increasing the ORL of 15% daily after reaching a COD reduction rate over than 80%, reduced the start up period to 24 days to reach OLR of 25 g L-1d-1. During the start up, the COD reduction rate ranged from 83 to 93% and was about 91% at the end of the start up period (fig.1). In addition, the concentration of VFAs was under 0.6 g/L and of VSS was about 0.3 g/L. Furthermore, the methane production performance ranged from 0.38 and 0.30 for an OLR of 0.864 and 17 g L-1d-1, respectively. The highest methane production was about 3.5 L per hour at the end of the start up period. According to these results, stalks grape could be used as an efficient biofilm carrier and as alternative to plastic carriers which may allow the application of such technology locally at wine factories with less cost and with short start up period. Further investigation will be made to study the efficiency of such technology to treat real winery effluents in long term and the anaerobic digestion of colonised stalk without vinasses feeding during the little discharge period.
